A good quality high speed blender and a good food processor are an investment, but they'll save you so much time in the kitchen. The best blenders like our favorite, the Vitamix blender, come with a special single serve attachment that comes in handy when making smoothies, sauces, dressings and marinades.
An immersion or hand blender is also an incredibly helpful tool when making quick purées, soups, mashes and homemade mayonnaise, with quick and easy clean up.

The Best Mixing Bowls and Measuring Tools
Mixing bowls (which can also work as mise en place bowls) in a variety of sizes, are extremely helpful tools in the kitchen. I always prefer glass and stainless steel bowls.
A set of measuring cups and spoons will help you measure out ingredients for all of our recipes with precision, and a digital scale is also a great tool to have.

The Best Chef's Knives, Cutting Tools and Bamboo Cutting Boards
A good quality bamboo cutting board will make life in the kitchen a pleasure. Buy one that will fit your counter space and storage space, but I prefer a very large and slightly heavy board.
In my experience, when you're looking for the best chef's knife, it is best not to purchase a full knife set, but get a good quality chef's knife, a serrated knife and a smaller pairing knife to start.
There are mainly 2 types of knives: European and Japanese. Both can be wonderful. Japanese knives are lighter in weight and my personal favorites for vegan cooking. I usually opt for a Japanese chef's knife, a European paring knife, and a less expensive serrated knife of any type.
Finally, having a honing steel to maintain the knife's sharp edge on a daily basis is a must, and sharpening tools like a sharpener or wetstone can be so useful.

The Best Pots and Pans
Rather than buying a large expensive pots and pans set, I always recommend a few specific high quality items that you'll truly use again and again, including one large stainless steel pan (which could last you for 20-30 years), a large and smaller non stick pan (these need to be replaced regularly when scratched), a Dutch oven for stews, a large stockpot and a pot for sauces or grains. One smaller one for sauces, or small amounts of grains, oatmeal, etc.
A grill pan and a fondue pot can be fun additions, and a steamer basket that will fit your pot with a tight fitting lid is a must.
If you love making pancakes, a non stick electric griddle will be a great addition.

Favorite Spatulas and Hand Held Utensils
We often forget about the small pieces of equipment, spatulas and handheld utensils that are a must in the kitchen, from wooden spoons, to tongs, to rubber spatulas, thin metal spatulas, start with one or two and expand your collection as you go.
Whisks, box graters and microplane graters are also hugely helpful, as is a good stone mortar and pestle where you can grind whole spices and make a quick sauce, and there are so many others.
