There's this restaurant I love in Madrid where you basically get to assemble your own meal. Their kitchen is in the center of the restaurant and you get to see all the different sides and components they have, and you get to pick and choose like a kid in a candy store.
I love to recreate this feeling whenever I can at home, making several smaller components, setting them out and having everybody pick the options they love and make their own combinations of flavors.
When I do this at home, I opt for simple sides that I know so well, I can practically make them in my sleep! That way there's no stress added, and I can focus on making a special recipe, or a delicious dessert, and all my components are taken care of.
For today's quick fix I thought I'd give you a 3 for 1! Three of those simple and delicious vegan side dishes that make a frequent appearance at our house. Whether you're serving just one of these next to your favorite main dishes, or making veggie bowls with different components, they're so yummy and easy to make!
As with all our quick fixes, these three require no measuring! It's a great opportunity to practice cooking by instinct, and with the video as a helping hand, you'll have no problems making this one. They're practically foolproof.
We're making vegan spiced roasted sweet potatoes, garlicky almond green beans and a Cajun and lime corn with leeks and lime! Let's do this shall we?!
Spiced Up Roasted Sweet Potatoes
Ingredients
- Sweet potatoes cut into cubes
- A drizzle of high heat oil (canola, safflower, sunflower, etc)
- A few dashes of paprika
- A few dashes of cumin
- A few dashes of cinnamon
- A dash of cayenne pepper (optional)
- Salt and pepper
Directions
1. To make the spiced up roasted sweet potatoes, pre-heat the oven to 400ºF (205ºC), and place the cubed sweet potato on a parchment lined baking sheet.
2. Toss them with a drizzle of oil, the spices, salt and pepper, spread them out on the pan so that there’s space between them and roast in the oven for about 20 minutes or until fork tender. Serve and enjoy!
Almond Garlicky Green Beans
Ingredients
- Green beans, ends trimmed
- Finely ground almonds
- Garlic powder
- Olive oil
- Salt and pepper
Directions
1. To make the garlicky almond green beans, bring a pot of water to a boil and add the green beans for only 30 seconds. Remove them with a slotted spoon or spider and shake the excess water off. Place them in a bowl.
2. Add a drizzle of olive oil, a few dashes of garlic powder, salt, pepper, and lots of the ground almonds. Toss well so that everything is well coated, serve and enjoy!
Cajun and Lime Corn
Ingredients
- A drizzle of oil for the pan
- Thinly sliced leeks
- Frozen corn kernels
- Cajun seasoning
- Lime juice
- Salt and pepper
Directions
1. For the cajun lime corn, heat a pan on medium-high heat, add a drizzle of oil and sauté the thinly sliced leeks until translucent.
2, Add the frozen corn kernels and toss.
3. Add a few dashes of Cajun seasoning, salt, pepper, and a squeeze of lime juice. Serve with additional lime wedges and enjoy!
