I grew up hating the texture of oatmeal, and although I've grown to accept that once you add a ton of delicious toppings, oatmeal can become a perfect bowl of porridge with all the fun fixings, there's one oat recipe that made me fall in love instantly, no wooing needed. I'm talking about the easy perfection that are overnight oats. These lemon blueberry overnight oats are without a doubt my favorite recipe for them. This is a parfait-style, beautifully layered jar full of flavor, texture, and all the good-for-you ingredients your morning or afternoon snack needs.


With a creamy overnight oat base, zesty lemon, two-minute stewed blueberries, dairy-free yogurt, and fresh berries, every spoonful is packed with brightness and balance. It’s 100% vegan, easy to prep ahead, and makes mornings feel a little more magical. 

Perhaps my second favorite thing about this vegan breakfast is these layers aren’t just tasty—they’re like edible art. Perfect for those Instagram-worthy moments or simply treating yourself to a beautiful start to the day, since if using clear jars or mugs I'll teach you ho to alternate the perfect layers to "paint" against the glass with your ingredients, add dollops, add bright berries, add crunchy pistachios for some green color and crunch. 

The fact that these are stunning makes them perfect as the vegan option to take to brunch. Everyone will want one.

How to Make Lemon Blueberry Overnight Oats

Step 1: Make Quick Stewed Blueberries

Add blueberries, maple syrup, and water to a small saucepan or pot with a lid.

  • Bring it up to a boil, then cook over medium-low heat for 2 minutes. 

  • Once the berries begin to break down and become syrupy, uncover the pot and lightly mash some of the berries that might still be whole, using a fork. 

  • Let the mixture thicken a bit and remove from the heat and set it aside.

(💡 Tip: This step adds a perfect jammy contrast that’s totally worth it!)



Step 2: Prep the Overnight Oats

In a jar or mixing bowl, combine the rolled oats, salt, chia seeds, plant-based yogurt, plant-based milk, lemon zest and juice and maple syrup. Stir well, and let it rest for a few minutes for the chia seeds to plump up an dthe mixture tp thicken slightly. Because of using the thickness of the yogurt, you don't need to let this sit overnight if you want to enjoy them right away. Both options are possible with this recipe!

 



Step 3: Assemble Your Parfait Jar

Now comes the fun part—layering like a food stylist, or a painter, or becoming a kid again and remembering your sand painting days (remember those layers of colored sand? Yes, I'm an 80s kid!)

  1. Add a layer of overnight oats.
  2. Add a spoonful of stewed blueberries towards the side of the glass

  3. Follow with some fresh raspberries and press them with a spoon towards the glass.

  4. Repeat the layers making a nice design until the jar is full.

  5. Top with a big dollop of non-dairy yogurt, fresh raspberries, blackberries, blueberries or any fruit you love, add extra lemon zest, a drizzle of blueberry sauce if you're feeling fancy, and finally, some chopped pistachios for that added crunch and green color.

Make-Ahead & Storage Tips

  • Store in airtight jars or containers in the fridge for up to 4–5 days.

  • The oats get thicker and creamier over time and the flavors deepen—so go ahead and meal prep or batch-prep a few!

  • Want extra protein? Stir a scoop of vegan protein powder or nut butter into the oat base, adding more non-dairy milk and/or yogurt until a creamy consistency is reached.

Play with textures – Don't forget those pistachios to top! You can also add a sprinkle of granola or other crushed nuts or toasted seeds just before serving for extra crunch.

FAQs

Can I use steel-cut oats instead of rolled oats?
Although the texture will be slightly different, both will work so use what you love and have on hand!

What kind of dairy-free yogurt is best?
Coconut yogurt is rich and creamy, soy yogurt has more protein, and almond yogurt is nice and light—it’s all about your preference! I used Alpro soy-coconut yogurt for this one. A dairy-free Skyr or Greek style yogurt will work too.

Can I skip the stewed blueberries?
Technically, yes, but they add a juicy, jammy punch that fresh berries alone can’t replicate. And they only take 2 minutes! They're also part of of gorgeous layers, our purple paint if you will.

LEMON BLUEBERRY OVERNIGHT OATS
Yield: 2 servings | Prep time: 15 minutes | Cook time: 2 minutes


Ingredients

For the jammy blueberry layer:

  • 1/2 cup blueberries
  • 2 tablespoons water
  • 1/2 teaspoon maple syrup

For the overnight oat base and toppings:

  • 2/3 cup oats
  • A pinch of salt
  • 3 tablespoons chia seeds
  • 1/3 cup non-dairy yogurt + 2 heaping tablespoons for topping
  • 3 & 1/2 teaspoons maple syrup
  • The zest of 1 lemon (reserve a bit for the topping) + 3 teaspoons of the juice
  • 1 & 1/3 cups non-dairy milk
  • 1/2 cup fresh raspberries and/or blackberries
  • A few blueberries for topping
  • A few chopped pistachios for topping

 

Directions:
  1. In a small pot add all the ingredients for the jammy blueberries, bring up to a boil, cover, lower the heat to medium-low and cook until the blueberries have burst (about 2 minutes). Uncover the pot and lightly mash any whole blueberries you see, cook and let the liquid reduce for about 2 minutes or until you have a thicker texture. Remove from the heat.
  2. In a bowl, combine the oats, salt, chia seeds, 1/3 cup of yogurt, the 3 & 1/2 teaspoons of maple syrup, lemon zest and juice and the milk. Mix well to combine and let it rest for just a few minutes to help it firm up slightly.
  3. Grab two clear glasses, jars or mugs and begin to layer all the components:
  •  Add a layer of the oat mixture.
  •  Add some fresh raspberries to the side of the glass in different places and mash them into the glass.
  •  Add another layer of the oat mixture.
  •  Add a layer of the jammy blueberries.
  •  Continue layering these three components until you’ve used up all your oat mixture.
  •  Top each glass or jar with the extra yogurt, fresh berries, chopped pistachios and lemon zest.

 4. Eat right away or place the glasses or jars, covered, in the fridge until ready to enjoy. Dig in!
