Just in time for Valentine’s Day, we thought we would teach you how to make one of those quintessential breakfast staples which can also moonlight as a snack or as dessert! To me nothing is more fun or romantic as a yummy breakfast shared together, and I also happen to love making a great delicious breakfast for myself when Carlos has to work early. It’s a great form of self love and self care to take the time to prepare and serve a breakfast you really feel like eating, so in this month of celebrating love, we’re making these scrumptious waffles. Perfect whether you’re celebrating the love of having friends around a big brunch, a romantic breakfast for two, or the perfect party for one.


We’re using a very unique ingredient in this recipe, don’t feel intimidated by it, I promise it will give you delicious waffles with the best texture and you won’t even be able to tell that it’s there.

THE PERFECT VEGAN WAFFLES

Yield: 4-5 waffles⎮ Prep time: 25 minutes ⎮ Cook time: 5-8 minutes per batch



Ingredients


For the waffles:
  • 9 tablespoons aquafaba (the brine of a can or jar of chickpeas)
  • 1 & 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons brown sugar
  • 2 tablespoons melted non-dairy butter
  • 1 cup non-dairy milk
  • 1/2 teaspoon vanilla extract
  • Spray oil or oil on a paper towel or brush to coat the waffle iron

For the topping:
  • Maple syrup 
  • Fresh berries
  • Banana slices

 



Directions

  1. Add the aquafaba (chickpea brine) to the bowl of a standing mixer (you can also use a handheld mixer) and whip on high for about 8-10 minutes until it’s reached the consistency of stiff peaks. Set aside.

  2. In a large bowl, mix together the flour, baking powder, baking soda, salt and brown sugar.

  3. Add the melted non-dairy butter, milk and vanilla extract and mix to combine.

  4. Gently fold in the stiff peaks you made with the aquafaba until no loose flour remains. Do this gently in a folding motion.

  5. Let it rest for 5 minutes while you pre-heat your waffle iron to medium-high.

  6. Spray the waffle iron with some oil (or use a brush or a paper towel), and using a 1/2 cup measure per waffle, pour the batter in the hot waffle iron and close it.

  7. Cook the waffles for 8 minutes for crunchy waffles, or less if you prefer them softer. The timing will also depend on the waffle iron you have so experiment until you find the texture that you love.

  8. Serve topped with the berries, banana slices and maple syrup or with anything you like, and enjoy!
